Need advice and recommendations for NY trip next week

My wife and I have been to NY many times and are returning May 4-7 for my 40th birthday. We already have the following on our list of places to go back to:

Bleeker Street Pizza
Katz's Deli (maybe)
Grey's Papaya
Shake Shack
Ess-a-Bagel (maybe)

These are all cheap eats that we love. What we need is a place for my 40th birthday dinner. At the moment I'm considering Katz's Deli or John's of Bleeker Street (never been there), but these are so casual - it might be nice to go somewhere a little nicer... but not where the food is super fancy. I am not interested in any place that serves pork cheeks and baby quail with asparagus reduction sauce. :)

- I am not into super fancy food like Gramercy Tavern or Blue Hill, and I'm not into steak or French food. Risoterria is more up our alley - casual places with great food.

- We are considering trying Sushi Yasuda (if we can get in). Looked at Balthazar, but it's too frou frou for me.

- We like Italian (Patsy's) but I just came back from 3 weeks in Rome and have had my fill of pasta for a while.

- I'd consider a great upscale restaurant that has a casual bar menu with sliders, burgers, soups, pastas, etc. Great food in the more casual atmosphere. Looked at the Gramercy Tavern bar menu and it's almost as fancy as the regular menu...

Our hotel is on the bottom end of Soho. Any suggestions? Thanks in advance!
