Advice needed on mid range restaurant choices

We'll be spending a few days in Seattle in September as part of a wider vacation. We can't really afford to do any higher than mid range restaurants (the dollar/pound exchange rate is a little brutal post Brexit!) I've done a bit of online research and the following places seem interesting. Be grateful for any advice on which if these are definitely worth a visit, and also if I have made any noticeable omissions.

Bateau
Chavez
Il Corvo for lunch
Kedai Makan
Maneki
Matt's in the Market or Rock Creek (which would you recommend out of the two? Rock Creek looks a little cheaper)
The Wandering Goose
Harbor City
La Carta de Oaxaca.
Steelhead Diner
Revel or Joule?
Bitteroot
Brimmer & Heeltap
Porkchop & Co
