Advice on making gnocchi from scratch

Hey 'Hounds,

So I'm making gnocchi from scratch for a date. Thing is, I've never attempted it before. It seems so straightforward, but everyone tells me that it's pretty tricky to get all the variables right...amount of flour, boiling the potatos vs baking them, optimal size, etc.

I'd love to hear some of the tricks and tips from those who love to make this dish.
