Advice for hosting a large Thanksgiving dinner

My family is hosting our first Thanksgiving dinner, for anywhere from 15-20 people. I didn't grow up in the US so Thanksgiving cooking is still a bit new to me, and even though I'm a pretty good cook, I'm a little nervous. I've picked the recipes I want, but am not sure how to increase quantities. I'm assuming for really beloved sides like mashed potatoes and stuffing, I should double or triple recipes, but for other sides, do you think it's better to double or triple recipes or make other sides?

Also, how do people handle having only one oven? It seems like a lot of the traditional sides are baked or roasted, and I don't want to be sauteeing for 20 people on the stovetop anyway.
