Advice for homemade cookies for wedding!

I really want to make homemade cookies as favors for my wedding. I am an experienced baker so I am comfortable taking on the project as long as I can keep the cookies fresh. I think I will need to bake all the cookies in advance and then freeze them (I am having 200 guests, so around 600 total cookies). Does anyone have suggestions for this scenario:

I will bake in advance, then freeze the cookies for about 6 weeks. I need to drive to the wedding city, which is a 9 hour drive so the cookies will defrost in the car. Then can I re-freeze them for a week and thaw right before the wedding? I want to put the cookies in the decorative bags 2 days before the wedding so I don't get hit with a late night the night before the wedding.

These cookies will go through a lot! Any suggestions/advice for keeping them fresh?

Also, suggestions on what types of cookies will be best?
