advice on fast curry stew to put over rice?

I need help making a good everyday curry with enough sauce to go over rice and I want to get to the point where I can do it quickly in my sleep. I am thinking I would parboil veggies first, dredge meat in flour and curry powder, brown the meat with onions, add stock and simmer till meat is tender, then add the veggies and some thickener like corn starch mixed in with some broth. Am I on the right track? Anyone have advice or a good recipe to share? Many thanks in advance...
