I need some advice from a baking expert

I'm trying to recreate a certain kind of muffin I used to buy years ago from a bake shop. I've been able to duplicate the taste, but I'm still having trouble with the texture.

I'm looking for a texture that's somewhere between that of a cake or muffin, and fudge. I made a batter using flour, egg, applesauce, sugar, and a small amount of baking powder. The problem is that the texture is too light and airy, and I want it much more dense. Also, though it's not dry, it's not *conspicuously* moist, for example, the way some muffins are.

Anyone have any suggestions as to what to add more of, or less of?
