How far in advance would you salt a turkey breast before roasting?

gourmanda | Nov 23, 2011 02:59 PM

Have a 7 1/2 pound turkey breast and am not interested in brining as my family is a fan of the resulting texture. I know some pro. chefs will salt steaks 24 hours in advance and the advice for red meat that it draws out too much juice has been debunked. Anyone do poultry that far in advance?

TIA and Happy Thanksgiving!
