They are baking breads as well as pastries there as of today. Not all, but the counterman reeled off the names of six or seven varieties of bread that had been baked on site -- mostly plainer ones, like Ciabatta, their long Baguette, Epis (new to me) and so on. I guess they are working up to perfecting their Walnut Levain for me....

Ruth L will want to know they had Challah bread there today (don't recall if he said it was baked on site). Maybe they are working up a day-of-the-week schedule.
