AC - Docks, Knife and Fork, or Red Square?

My dad and I are taking my mom up to Atlantic City for her birthday, and we're having a hard time deciding between these three establishments. We've been to Dock's, and loved it. I've heard the Knife and Fork (owned by the same folks) is also wonderful, but tends to be an older crowd, whereas Red Square might be overpriced, but with great food and a fun, younger crowd.

I'm looking for a nice in between - a little hip, with fabulous food, and no insane prices. Can any of these places satisfy that? Or does anyone have any other suggestions?
