Please share your absolute favorite recipe for weeknight cooking (>30 min. total cooking time).
Here are my recent favs. Recipes for 2.
Two pkgs. Shin Black Ramen (photo above)
1 box of Korean-Inspired pork shoulder (photo below - available at TJs). I use half of this. Slice meat and set aside.
1/2 sliced onion
8-10 oyster mushrooms - pulled apart
4-5 chopped (1 in.) asparagus stalks
Make ramen per package directions. Meanwhile sauté the onion until translucent. Add mushrooms and asparagus and sauté until done. Add sautéd veggies along with sliced meat to ramen.
Makes plenty for dinner at least 1 lunch the next day.
2. Garlic Naan Pizza
Two pieces of garlic naan (TJ's)
Pizza sauce (I use Rao's marinara with additional oregano and tomato paste).
Leftover pork shoulder - sliced
Assemble and bake at 400 degree oven for 10 minutes.
