abalone wontons

I have an abalone and want to make wontons with it. My plan is to grind it down with a meat grinder and then pulse it a few in the food processor to get it to a smoother texture. I'm thinking some grated ginger, white pepper, salt, sugar, sesame oil, oyster sauce, finely minced shitake mushroom, and some garlic infused oil.

What do you all think? Any suggestions, ideas?
