I made these last night. I didn't realize how many it made until I was actually mixing the ingredients. Wow. At least 2.5 doz, which, given the branniness is a little scary. I guess I can freeze these, though.
Anyway, in all, the taste is pretty good, but even though I prefer muffins to be less sweet (jam is good), these were perhaps too unsweet...which leads to the first questions:
How can 2/3 c of malt be so unsweet when a comparable amt of rice syrup would be sweeter? They both have the same amt of cal/TB. Or is it the number of Sugar Carbs which makes the diff? The latter, I guess. Anyway, this leads to the second part of the q: would adding a banana be OK? Or would it make these too moist/gummy?
2nd q: These were pretty dry, a bit crumbly almost and I was hoping for something moister. I used 5oz of yogurt mixed in w/the 2 1/4c milk. Applesauce? More Yogurt? again...bananas?
