Thanks once again for the corn/basil/goat cheese tip. I made it again last night but added the goat cheese this time. Thought I died and gone to heaven LOL.
The goat cheese really did add that certain extra something to it which totally tipped it over the edge into a rather decadent side dish. Used my home grown basil this time too which made me even happier.
Just wanted to give you both another shout out for the good call on this.
