500 dollar gift card to restaurant in London for wedding gift? Wolseley?

Of course it will be converted ...

So, basically a good friend was married in London and we could not make the wedding. Normally if this were an American wedding, we'd give her a 500 dollar cash gift which, according to her is considered quite gauche in the UK ( separate conversation from another time) I had gotten a gift card for her and husband to use at Thomas Keller's Per Se here in NYC as they were living here for work, but have since moved back across the pond.

When I had suggested she help me arange some excellent restaurants for my cousins who were visiting London this past Spring this was her list:

Wolseley, cecconi, roast at borough Market, wright bros at borough Market, smiths of Smithfield, petrus for fancy.

Haven't been to London in about 5 years and am at a loss.

Where would the equivalent of 500 American dollars do best? Something fantastic, not just fancy, but defintiley special. This is a girl who knows her food.

If this were the States, I'd go with Per Se, Charlie Trotter's, Alinea, Le Bernadin, Chez Panisse, Bouchon, Daniel etc. That sort of thing.
