5 pounds of frozen beef stew meat and a shoulder roast--probably not the best quality

At my MiL's for T'giving, the perpetrator of culinary atrocities. She has agreed to let me cook dinner on friday but the condition is that the above is what I have to work with. Any ideas? Does a pot roast depend too much on the quality of the meat?
