$5/lb fresh tuna: What am I buying???

Ok, so at Central Fish in Hell's Kitchen I've seen tuna filets for $3.99 a pound, $4.99 a pound and up to $7.99 a pound. At other places, i see tuna for $11.99 and $19.99 (Whole Foods!!!!!) So is Central Fish that much of a bargain?? Or am I buying some less or undesireable parts of the fish????? And are they really that undesireable. I understand that the most expensive stuff is "sushi-grade" or "sashimi-grade", though, I'm not certain exactly which parts are and why, other than they're a little fattier and really, really fresh...
