48 Hourse in Piemonte, Langhe Area: Help with itinerary

We (my husband and I) will be traveling to Langhe region in a few days; our first time in Piemonte. We will be there for a short time and have an interest in exploring the area, discovering good regional food and wine. We are just learning about the wines of the region, (had no experience before trying a few bottles over the past several months in preparation for our trip). We love good, fresh, high quality foods, I like most foods although my options are somewhat limited because I cannot eat wheat and I am not really drawn to those traditional Piemonte dishes which are organ meat-based. We would be grateful to hear about others food and wine experiences, particularly recommendations for learning about and experiencing the wines of the region, considering that we will be there for only a short time. Regional Enotecas seem to make the most sense, although we would like to balance this experience with education on the wines, experiencing them paired with food. The idea of visiting wineries is appealing, although, I am not sure if this would be a good use of our time. Comments on our itinerary ideas would be appreciated. Is there an area not on our itinerary that we really should see? We are trying to stay fairly close to La Morra for dinner; my husband does not want to drive too far in the dark after drinking wine.

Monday: Turin-Alba-Grinzane Cavour-hotel in La Morra
~ 10:30: Arrive in alba from Turin : explore city, have lunch in Alba (nothing too heavy, have dinner reservations), we might have an extra hour before Grinzane Cavour opens at 3:00 pm
3:00 Regional Enotecs Grinzane Cavour (going on Tuesday is not an option because they are not open)
6:00: check into hotel (Art Suites in La Morra)
8:30: Dinner Veglio (they are also closed on Tuesday)

Alternate (would driving from Turin to Grinzane Cavour to Alba, then to La Morra be too much extra driving?):
10:30 visit Grinzane Cavour
1:00 or 1:30 - : Lunch ? in Alba and visit Alba or visit alba
5:00: check into hotel
Explore La Morra (Enoteca is closed on Tuesday)
8:30 dinner at Veglio

Tuesday: La Morra, Barolo, ? Cherasco (Some places are closed on Tuesday)
If the weather is nice (current forecast is for rain) we would like to take a walk in morning or afternoon.
visit Barolo (regional Enoceta and/ or LaVite Turchese

? visit Cherasco
Lunch: ? La Torre in Cherasco or somewhere else in another town
? visit winery
? Other suggestions
Dinner: If have big lunch, consider light dinner near La Morra such as More e Macine
If have a light lunch, consider dinner at La Torre or Bovia in La Morra or somewhere else close to La Morra

Wednesday: Leave La Morra for Cogne, stop in Bra, Pollenzo (Cheresco if do not go on Tueday)

Morning: leave La Morra
Visit Bra, visit cheese shop. There is also a market there on Wednesday, is it worth visiting?
Visit Pollenzo: is the wine bank worth stopping at?
Have lunch somewhere or just pick up items for picnic lunch. any suggestions considering that we would like to leave the area by 1:00-1:30 pm.
