I was at friend's house this weekend, and he asked me to cook something easy for dinner. I remembered the 40 cloves of garlic chicken stuff a while back, and looked it up. I sort of amalgamated a bunch of recipes, but especially used Nyleve's recipe (the one linked to below) and it turned out fantastic.
I used a mix of butter and oil to brown the chicken, and I used only thighs instead of a whole chicken. Put in bay and thyme. My friend LOVED it! He suggested putting in some pancetta next time, which I think would work well with the sweetness of the garlic.
Served it with mashed potatos, and Peruvian asparagus (bizarrely cheap at the local safeway) in a brown butter sauce.
