30" vs. 36" 5 Burner Gas Cooktop

At the threshold of doing a kitchen redo here and I'm pondering many options, including gas cooktops. Currently, I cook with an older Thermador 4 burner, 36" cooktop and am looking to replace it with another gas cooktop.
I know I want a 5 burner cooktop and am considering a 30" vs. 36" to eek out a bit more counter space around the cooktop and have a range hood easily expand beyond the borders of the cooktop to catch steam etc.
Does anyone have experience cooking with multiple pots on a 5 burner 30"? I'm wondering if it gets a bit crowded and tough to maneuver pots and pans around. Should I get a 36" with more room to groove?

Any suggestions for a 5 burner gas cooktop? I'm looking for mid-range pricing around $1500 give or take, reliability and high btu as well as super low btu burner for lowwwwwwwwwww simmer.
