3 super ripe, black plantains = ?

I had intended to use my plantains before they got to this super ripe, sweet stage to make Bayless' empanadas w/ plantains in the dough. Well, that window has passed and they are almost completely black and soft. I think they've gotten past the point of slicing and will need some mushing application.

Any bright ideas or recipes? Thanks, hounds.
