3 days Stockholm & 3 days Copenhagen! How does this meal itinerary look?!

I'm headed with my wife to Scandinavia for the first time and we are the type (like most of you), who plan trips around our meals! Here is my tentative itinerary based on research here and other publications/websites. I know this is "New Nordic" heavy, but when in Rome?! I am sold on Geranium, Noma and Lilla Ego, all other places I am open to changing. We would like some traditional food from each location as well (i.e. meatballs, etc). Any insight from you Hounds?

Stockholm
Day 1
Dinner - Lilla Ego
Day 2
Lunch - ???
Dinner - ???
Day 3
Lunch - Matsbaren or Veranda?
Dinner - Esperanto

Other restaurants I considered: Pelikan (late night meatballs?), Ekstedt, Oaxen Krog, Volt, Matsalen, Gastrologik, Frantzen (closed)

Copenhagen
Day 1
Lunch - ???
Dinner - Geranium
Day 2
Lunch - Almanak
Dinner - Noma
Day 3 (Sunday, so quite a few limitations)
Lunch - Torvehallerne
Dinner - Kodbyens Fiskebar

Other restaurants I considered: Kiin Kiin, Relae, Amass, Formel B, Clou, A.O.C.
