3 Days / "No Reservation" Restaurant Advice

No, not Bourdain's show. Going to be in Chicago from Thur. evening through Sun. morning. Looking for a focus on creativity, contemporary cooking, local ingredients, and nasty bits (not necessarily all at once). I've done Alinea, Frontera Grill, MK, Kevin, and other places I don't recall on prior visits, but it's been a couple years since my last Chicago visit.

I've got a very long list, but only limited opportunity. I've already made reservations at Blackbird and Publican, have Saturday night dinner free, a couple lunches, and perhaps a Sunday brunch.

The possibilities so far include Avenues, The Bristol, return to Frontera (wife really wants to go), Girl & the Goat, Graham Elliott, Purple Pig. I was not quick enough to score Next reservations.

Lunch possibilities so far include Belly Shack, Big Star, Cemitas Puebla, Hot Doug's, UrbanBelly, Xoco (or maybe Frontera for lunch).

Would appreciate thoughts on all of the above and any other suggestions, including places that may not be on the national radar screen yet. I should note that I've not included Moto / Ing or Schwa on this list. Wife's threshold for experimentation and lengthy tasting menus is lower than mine, and I'm trying to be sensitive to that. I know Avenues and Graham Elliott skew more in that direction as well.

As for the topic title: several of the places on my list do not take reservations (Bristol, Frontera, Purple Pig) and others are effectively impossible to get a reservation (Girl & the Goat, I'm looking at you). Will these places be a complete madhouse on a Saturday night? Is there any prospect of walking into G&TG, and will the others be a lengthy wait? Always happy to eat at the bar if that's an option.

One other question - is David Carrier still at Kith & Kin? I thought I read that he left several months ago but he is still mentioned on the website.

Happy to reciprocate with advice for anyone coming down to South Florida.
