I was wondering if anyone can recommend 3-4 "high end" sushi restaurants in Tokyo that each serve nigiri with a different kind of rice. I would really like to get a sampling of these different kinds in order to eventually just focus on sushi restaurants with a particular style of rice that I intimately like. Of course, descriptions of the rice would be great.
(For example, based on what I have gathered on this board and other blogs, correct me if wrong: Hashiguchi serves very lightly seasoned rice; Harutaka rice is quite vinegared/strong; etc. There appears to be "Jiro-style" rice, "Kanesaka-style" rice, etc. and I am not sure of the distinctions between each of these. A description of relative size of the rice compared to other establishments would also be very helpful.)
One thing I am not really keen about is definitely the rice served at the Kyoto sushiya "Sushi Matsumoto" which seemed quite overpowering. (I believe this is due to the fact that the rice was seasoned with very noticeable amounts of salt.) I found Kanesaka and Mizutani rice to be solid and I have no issues with red-vinegared rice.
