Okay, one of my New Year's resolutions is to make at least one new recipe each week. I appropriated this resolution from baseballfan and am pleased to say that it's already January 6th and I have kept this resolution! Anyway, last week's recipe was Creamy French Lentil Soup (which was posted or linked to on chowhound). It was rather good, though I'd have added a bit more balsamic vinegar (the flavor was too subtle and I prefer it oomphier). I also used pancetta insteadof bacon, because I had some on hand. It'll be a keeper recipe, as it's quick and easy, something I can put together after work. It's also healthy.
Today (Week 2) I made Baked Cod with Chorizo and White Beans. I'd pulled some cod from the freezer yesterday, but I didn't know what I was going to do with it. Serendipitously, I went to meet my favorite ex-BF at Borders to have coffee and chat and read books and magazines. I picked up the February issue of Eating Well and, lo and behold, saw this recipe. So I bought the magazine. I had less cod than the recipe called for, so I just adjusted the ingredients (except for the beans, where I used the whole can). It was easy and very flavorful! Mmmm, I can't wait to have it again for tomorrow's lunch! With the chocolate-covered rice krispie treat from my Christmas stocking, it was a complete meal :-) Anyway, the recipe calls for Spanish chorizo cooked with shallots, fresh thyme (I used dried), white wine, halved grape tomatoes, salt, pepper, and the cod.
Anyway, thanks bbfan for the resolution idea! I do have so many cookbooks and magazines and I need to cook more, rather than continuing to fall back on standbys or just plain weird leftover combinations (e.g. the chickpea sandwich--not hummus, but whole chickpeas on whole wheat bread with light mayo). Not that there's anything wrong with the weird combos (and the chickpea sandwich is actually tastier than it sounds) but not to get into this rut.
Anybody else want to play along with new weekly recipes? I'll try to post my new ones each week, and it would be fun if someone else would want to join me!
