I remember making a wonderful chicken breast recipe back in the mid to late 1970's or maybe even the early 80's. I'm not 100% sure, but I think it was from a Bon Appetite magazine and I seem to remember the issue focused on lemons. The recipe was a skin on chicken breast stuffed with a whole chopped lemon, garlic and some kind of creamy cheese. I can't remember if it was a goat cheese or it might have been ricotta. I do remember that it was a great dish. I made the mistake of loaning the magazine to a friend and never getting it back. I have thought of this recipe many times through all these years, so if anyone out there knows of this recipe I would love to have it.
