I recently visited Boston and enjoyed the excellent handmade pates and terrines at The Butcher Shop. In the past, I have always preferred terrines but their pates (crust covered) where also excellent.
That experience and the recent arrival of 130 pds of pork from my happy organic pig share have got me thinking and buying.
Any one have any favorite recipes to recommend? They need not be limited to pork. I especially like rabbit and game.
