this is my first attempt to sprout -- tried organic mung beans and thought they would take 3 - 5 days -- last night was day 2.5 and they were all nice and white, and i realize now that i should have harvested them then, but i thought it needed a little longer since they were much smaller than the ones i see in the market. this morning found them turned reddish brownish color with tiny leaves emerging. my cookbook and sprouting instructions say to harvest BEFORE the leaves appear. why is that? is it not safe to eat when the green shoots appear, or is it just a taste thing?
i ended up with about 2 quarts of sprouts. do i have to throw them all out and start over?
