I'm thinking about Kabochas lately and saffron and also some nuts. I would like a fluffy, souffle like filling with some of these ingredients on a nutty crust. I tried to Google recipes with this stuff, but nothing comes up except for savory dishes. So I'm asking for some Hound help. Should this recipe work and result in a fluffy, nutty, not-too-sweet dessert bar?
If not, how should I modify the recipe so I get a decent dessert?
4 egg whites beaten until stiff with soft peaks
2 cups roasted kabocha and pureed
8 oz cream cheese
½ c flour
1 c sugar
pinch of saffron
1 cup ground hazelnuts
1 stick butter
1 egg yolk
1 cup flour
In a food processor, blend hazelnuts, butter and flour. Mix in yolk. Press the mixture into the bottom of a round springform cake pan
Blend Kabocha puree and cream cheese. Add in flour, sugar and saffron. Fold in egg whites. Pour mixture on top of crust mixture in pan. Bake at 325 for 50-60 minutes.
