Just because something is vegetarian doesn't mean it's healthy, in the same way as gluten-free doesn't mean fat-free or sugar-free. But these really are healthy veggie tacos, stuffed with seared poblano peppers, yellow squash, onions, and cremini mushrooms. OK, so it's topped with a little Cotija cheese, but as long as you don't load up on the cheese, it's OK and totally worth the taste addition. And the pico de gallo salsa? Eat boatloads of that delicious stuff. It's just vegetables.
