Vegan Versions of Classic Southern Dishes

If you're not having cornbread with your Southern dinner, then you're probably having biscuits—and if it's time for breakfast or brunch, why not pour creamy, peppery gravy over top? This version uses vegan buttermilk (which you can easily make yourself from vinegar and almond milk). The simple but satisfying gravy is mixed with vegan sausage, but you could sub in sauteed mushrooms if you prefer.
