Vegan Versions of Classic Southern Dishes

Pulled pork's savor comes in large part from the sweet-spicy-tangy barbecue sauce it's slathered in. While jackfruit packed in water makes a shockingly good vegan substitute for the meat, it can be hard to find, so try the humble yet always amazing eggplant instead.
