Luckily for those who don't eat meat, and those who are just trying to be a bit healthier, even dishes steeped in tradition can be updated to be vegan. Take fried chicken, for instance. For a meatless alternative, you could certainly bread and fry tempeh, soy, or seitan chicken alternatives, but cauliflower makes an unexpectedly hearty and minimally processed option. It's juicy and tender yet still substantial, and the double-batter coating is ultra crunchy and perfectly seasoned with a spicy kick.
