Springtime vegetables fennel and Belgian endive form the base of a sweet-tart slaw that would be great with a heavy main dish. Or, if you are going with light and bright, a lean protein could work too. thinly sliced Belgian endive and a white wine vinaigrette. Both vegetables are very thinly sliced. Also thinly sliced, the apple is a Fuji because it is sweet and mild without that mouth-puckering tartness granny smith apples have. The dressing adds a little tang with white wine vinegar added to the minced shallot and olive oil.
