Pisco, a Peruvian brandy, became widely available in San Francisco during the Gold Rush, when it flowed freely in the Barbary Coast district of the city. This cocktail, which was invented at the Bank Exchange Saloon in 1890, mixes it with pineapple syrup and lemon juice. The drink goes down easy, but packs a wallop, so watch out.
