Fairmont Copley Plaza
This hotel located in the historic Back Bay is home to six rooftop hives that are maintained by Best Bees. The hotel is so dedicated to beekeeping and the harvesting of the honey, that Food and Beverage Director Tim Clapp is in training to become a beekeeper. Executive Chef Laurent Poulain features a special menu option for receptions that the Fairmont hosts—one of his dining "stations" displays frames from the hotel's hives, and these frames slowly drip honey into a warm wheel of brie. In the summer, expect the honey to star in cocktails and dishes at on-site Oak Long Bar + Kitchen.
