Ham is another traditional Easter protein. For some reason, it's not rabbit. Hmmm ... Well, instead of making ho-hum ham sandwiches the day after or just eating your leftover ham as-is, making chicken cordon bleu burgers is a cool way to Frenchify your ham. All the elements of the French classic are revisited in burger form with Swiss cheese, shallot, ham (ignore the thinly sliced Black Forest ham suggestion and go with the ham you got).
