First you gotta creat the ground meat. Take that lamb off the bone, chop it into 1-inch cubes, freeze it on a tray or plate for 15 minutes, and throw it in the food processor. Make sure to not fill it up more than halfway and work in batches, if necessary, pulsing for a good burger-like grind. Then you flavor the ground lamb with mint, parsley, garlic, cayenne, and onion before forming patties and grilling.
