More than a decade has passed since Louisiana designated gumbo as its official state cuisine, but it has been its unofficial one for long before that. Gumbo is a stew consisting mainly of stock, meat or shellfish, vegetables (onions, bell peppers, and celery are the "Holy Trinity"), roux, okra, and filé powder. Nearly every establishment and home chef within the city claims they have the best version of the dish. Sounds like a good excuse to taste all of them and decide for yourself!
