These flexible very thin pancakes are like French crepes, but they're healthier because they're made with chickpea flour. Chickpeas are also known as garbanzo beans. So this is really a high-protein, low-carb crepe that you can fill with whatever you want, fresh fruit, a fruit puree, nuts, maple syrup, honey, nut butter, or ricotta or mascarpone cheese if that doesn't upset your diet.
