Sure, there's no meat, cheese or sour cream in these fajitas, but there's a lot to celebrate. The poblano chile lends a wonderful smokiness to the dish, along with the cumin and and portobello mushrooms, which are some of the meatiest of vegetables. Then you have that yellow onion, which when softened becomes sweet like the mild bell peppers. The spicy jalapeno pepper gives it all a kick. And last but in no way least, is the simple guacamole made from two avocados mashed with fresh lime juice and a sprinkle of salt. Don't forget to serve the fajitas with roasted tomato salsa, diced red onions, hot sauce, and cilantro.
