This healthy egg-white frittata recipe with shrimp, tomato, and spinach can be for one of those breakfast-for-dinner evenings. Just add toast, pita, or salad on the side. The frittata only takes about 25 minutes to make, but that's kind of a lie. You do need to roast a batch of tomatoes first.
