Smoking any fresh cheese is surprisingly easy and fun. Tie the cheese in cheesecloth to prevent it from spreading, set it in an aluminum pan pierced with vent holes, and smoke it for 25 to 40 minutes. Serve it with crackers, on a pizza, or in a sandwich.
