Louisiana: Jambalaya
Another state rich in great food, some of Louisiana's best dishes are Creole and Cajun, which President Taylor loved too. Jambalaya is a prime example of why. This "red" version (with tomatoes) is in the Creole style, while tomato-free "brown" jambalaya is the Cajun way.
