Introduced to New Orleans in the mid-1700s, pale green mirlitons are called chayote squash elsewhere. With a crisp texture and flavor similar to zucchini and cucumber, the "vegetable pear" (as mirlitons are also known) are commonly cooked in stews or stuffed and baked, and in the past were often grown on backyard fences all over the city.
