These tartlets are kinda like mini upside down pineapple cakes, in a way. The tropical two-bite tarts with buttery crust are perfect for an Easter dessert buffet or cocktail party. Make sure to use unsweetened coconut flakes, or else the sugar coating the shredded coconut could burn the bottom of your 12 wells of your muffin tin. Plus, it might taste too cloying. The puff pastry goes on top of your ginger, brown sugar, pineapple, and coconut mixture in this case, and after it puffs up all golden delicious, then you invert the tartlets for the fruit to be on top.
