Stores and farmers markets will soon start filling up with fresh fruit; in season, berries and stone fruit (peaches, plums, cherries) are of course delicious eaten all by themselves. But if you want to transform them into an easy, crowd-pleasing dessert, it's hardly any extra fuss to whip up one of these crisps or cobblers. Cobblers, which originated in the British American colonies, consist of a stewed fruit filling with a plain, biscuit-like topping. There's so much room for interpretation here – feel free to jazz up the filling by adding spices like cardamom and ginger, popping some berries in with the peaches, or adding a flavored extract to the topping dough (like almond or orange).
