Nothing says spring like an easy asparagus soup recipe with crème fraîche. The fresh, mild, slightly sweet, a tiny bit bitter seasonal vegetable springs forward with its flavor, softened even more with the creamy addition. You add the savory element with the chicken broth, or go with vegetable broth if you're keeping it meat-free, and sauteed, minced garlic and diced onion. The whole concoction is all smoothed out by making it into a purée. Swirling in the crème fraîche without stirring it in, plus topping it with a few shavings of asparagus makes a more appealing presentation.
