But if you can't find the smoked version, such as Rogue Creamery's Smokey Blue Cheese, just use a top-quality blue cheese. You'll only need a dab. You want to save room on your palate for the pureed beets that goes into the filling for this deviled eggs recipe. That beautiful garnet color didn't get there all by itself. Dijon, chives, and lemon juice also contribute to the overall taste profile.
