Kouign amann, a caramelized Breton pastry that is basically a croissant with sugar sprinkled over the layers as they’re rolled and sealed together, was a treasured addition to Allfrog68‘s Mother’s Day pastry assortment from Starter Bakery.

Count wilbanks among the admirers too, calling this example of Viennoiserie “salty, sweet, wonderful.” Starter’s cofounder and baker, Brian Wood, literally wrote the book on pastry: He taught at the San Francisco Baking Institute and contributed sections to its textbook.

Starter Bakery is a wholesale and catering operation without a storefront for now; the owners sell their wares at a few coffee shops, the occasional pop-up, and (soon) the Temescal Farmers’ Market.
